Busy, busy, busy!

It's been a while since I've blogged and I'm sorry for that my dear readers! This year is already moving faster along than I expected it would. With the new year came new things for me, including going back to college to get a degree I should have gotten years ago. I'm doing that full time, so between class, homework, and being a mom I've had very little free time to blog and I feel super bad about that. I promise in the weeks to come I will have new recipes to share with you all. I did snap a few pics of our food I cooked for the Super Bowl and the first birthday cake to kick off our birthdays this year, so I'll leave you with those as I've got to hit the books and study for upcoming tests this week! Brunch!

So as a new year brings in new resolutions, determinations, goals, and actions, I decided it was time  for our family to expand our culinary tastes. With this in mind, I was determined to find something new and yummy that they would all love. Now I'm a huge fan of brunch because you get all sorts of yummy breakfast-like food, but are not drowning in tons of sugar - I know, I know, some of you may not agree, but even with my huge sweet tooth, I'm just not into a ton of sugar first thing in the morning. I also love brunch because that means I don't have to be up super early on a weekend to get a nice, hot meal on the table. Something I've been craving for a while now and I have never made for the family is Eggs Benedict. This is a quintessential brunch food and a dish I've loved since I was in high school, so after the idea popped in my head I knew I had the perfect meal to try. Blogiversary and Chicken and Waffles!

Wow, I can't believe I've been blogging for a year now! Where has the time gone?! In celebration for my blog's first anniversary, I wanted something a little extra special. One of our kiddos has been asking for chicken and waffles for some time now as it is one of her favorites, but I've never been able to make it because I lacked the one main thing you need to make it - a waffle maker. I decided it was time to do something about that and got myself a waffle maker so I could finally make what I've heard is an amazing meal. It was totally worth the investment! I do have to admit the waffle recipe is not my own, it is just a basic waffle recipe that I found, however, they are awesome. Everyone loved this dinner, including an extra kiddo we had over this weekend. The kiddo who's been asking for this said it was the best chicken and waffles she has ever had and the waffles were nice and fluffy. Old Fashioned Goulash!

Well it's back to school after winter break and that means I need easy, delicious meals for the busy weekdays. As we get into the coldest part of the year, warm, comfort food is also needed. Luckily for me, our family has a variety of tastes so there are a bunch of meals that fit the bill. A perfect fit for this week, since we haven't had it in a while and I happened to have almost everything for it, was old fashioned goulash. What I love about this meal is it is made all in one pot and has a ton of flavor. I also get to sneak in a couple fresh veggies, which I love as the kids don't even notice. With the couple of extras I've added to this over time, it makes it a family comfort food favorite - in fact the kids were super excited when they found out it was for dinner!
