Breakfast burritos!

Any parent who has kids in sports knows that early morning games, at some point, are a given. For us, every football season we have at least two early morning games (requiring us to be at the field by 7:30am on a Saturday - that's just wrong!) and I've got to have a quick breakfast to pack so I don't have starving kiddos and I'm not having to get up at 5:00am to make it.  My trusty go-to is the breakfast burrito. Not only do these fill the kids up, but they are also warm - which is fantastic for early morning games as it is usually still pretty cold when we get to the field. Also, all the work is done the night before so they really are grab and go in the morning, letting you get a few more precious minutes of sleep. Make these the next time you need breakfast on the go and your family will be sure to love it! Salisbury Steak!

Growing up all I knew about Salisbury steak was that it was those frozen meat thingies. Sure they were ok, but the whole frozen meat, not really my thing. Then I met my meat loving husband and and learned that he enjoys it. I'm really not down with frozen meats in general, so I set out and did the normal research I do when tackling a new recipe and found that it doesn't have to be frozen! I put together the most important parts of this recipe and added a few touches as my own, like the sweet onion. I may have to start doubling up on this, as my kids always ask for more. Make this for your next meal and your meat lover will be sure to love it! What's cooking in my kitchen this week: Salisbury steak What you'll need:  2 lbs ground beef 1 sweet onion  4-5 mushrooms 1 beef bouillon cube, crushed 2 cups beef broth 1/2 cup bread crumbs 1 egg 1 tsp garlic powder 1 tsp onion powder 2 tsp salt 1 tsp ground black pepper 1 tsp ground mustard 1 Tbsp ketchu

Mexican tacos!

Being a Mexican-American family, we absolutely LOVE tacos (as I mentioned in a previous blog) and I am always on the lookout to take my taco game to the next level. This past summer the hubby and I went to Mexico and attended a Mexican fiesta, where my taste buds danced with joy! Not only did I get to see how they make their tacos in Mexico - Mexican tacos differ from American tacos in that they use corn tortillas and not flour tortillas for the shell -  I also had the most amazing side dish, a creamy poblano pepper corn dish. If you have never had a poblano pepper, you're in for a treat! They are not spicy and have a rich flavor. I knew then that I would have to try and replicate these for the whole family to enjoy. I've made the Mexican tacos a few times, but haven't yet attempted the side dish until this past weekend. Both were a huge success, with every bite being eaten! Make these for your next taco night and they will be sure to be the talk of the fiesta! What

Smokin' and grillin' in the snow!

My family just loves a good barbecue and now that spring is, mostly, here we can FULLY enjoy the grill and the newest addition to my hubby's "backyard kitchen", the smoker, again - yes, we are those crazy people who still barbecue a few times during the winter, and usually once during a snow storm! Did I mention my family loves barbecue? My darling hubby just needed a smoker and this past Christmas, Santa finally brought him one. He's already taken it on its maiden voyage where he made the most amazing pulled pork, topped with my homemade barbecue sauce, oh yum! But, that's another story for a different time...so he asked me this last weekend what was the next thing for him to smoke and after a little thought I decided on chicken quarters. He was game and our first barbecue of the season was planned - he handles all the meat outside and I stay inside and handle all the sides.
