Super Bowl 51!

Well the big game is coming up and while my beloved Broncos aren't in it this year, it's still the perfect opportunity to throw a party. With so many possibilities out there, you may be finding it difficult to come up with that perfect menu. No worries, as I have a line up that will be sure to make your party the talk of the town!  What's cooking in my kitchen this week: Caite's Colorado Chili Chicken wings - buffalo and bbq Hot crab canapes Green chile pinwheels  Chicken bacon ranch pinwheels Caite's Colorado Chili I have played around over the years with different variations of this chili recipe, but I finally figured this one out and it has a perfect balance of spice and flavor. What really adds the the flavor of this chili is the ground pork, although you can use whatever ground meat you prefer. What you'll need: 1 lb ground pork 2 cans (15.5 oz) pinto beans 1 can (15.25 oz) black beans 1 can (15.5 oz) great northern beans

Homemade Pumpkin Pie

Here's a bonus recipe for this week! I know the holiday season is over but I happened to have a couple of pie pumpkins lying around and my family just loves homemade pumpkin pie, so I decided to make some this past weekend. It may seem like it's difficult to do, but it's really easy and tastes so much better than pumpkin pie made from canned pumpkin. Oh and don't forget the whipped cream, or you'll never hear the end of it!  Pumpkin puree What you'll need: 1 pie pumpkin How to make it: Cut top off pie pumpkin and then cut in half. Clean out all guts and seeds. Place pumpkin halves in baking dish, skin side up. Put water in baking dish to cover about 1/2 inch. Bake at 375° for 35-45 mins, until pumpkin is fork tender. Let cool completely and peel off skin. Place in food processor and puree. Place puree in colander lined with cheese cloth and place colander in larger bowl*.  Drain pumpkin puree 2-3 hours until no more water is readily dripping ou

Sunday dinner

Ask my kids what's for dinner on Sunday night and they'll all tell you "Green Chile Casserole" as this is almost always what dinner is. This is for a couple different reasons. The first being it feeds us all with leftovers, second it only has seven main ingredients, and lastly, due to the few ingredients, it is under $25. Any time I can get dinner for about $3 per person, this is a huge win for my food budget! This recipe also happens to be near and dear to my heart as it has been in my family for three generations. It also is quick and easy so with all the craziness of Sunday nights getting ready for the week, I can still make a good, home-cooked meal. Welcome to my blog! I'm a little nervous as this is a new adventure for me, but I'm confident that I will get the hang of this. Let me start by telling you a little bit about myself. My husband and I are a modern-day Brady bunch family, so I'm mom to seven kiddos. Our oldest is out of the house, but that still leaves me an army to feed. We have a dog and a cat to complete our family and it's never a dull moment around here! Each week I will open up my recipe book and share the food my family loves. I hope it will help give you ideas to feed your army, no matter the size. Keep in mind, all my recipes serve 8 very well, so if you have as many as me to feed there's no need to increase the ingredients. If you have less to feed you may want to cut the ingredients down, unless you want yummy leftovers for the week.
