Sunday dinner
Ask my kids what's for dinner on Sunday night and they'll all tell you "Green Chile Casserole" as this is almost always what dinner is. This is for a couple different reasons. The first being it feeds us all with leftovers, second it only has seven main ingredients, and lastly, due to the few ingredients, it is under $25. Any time I can get dinner for about $3 per person, this is a huge win for my food budget! This recipe also happens to be near and dear to my heart as it has been in my family for three generations. It also is quick and easy so with all the craziness of Sunday nights getting ready for the week, I can still make a good, home-cooked meal. Hope you and your family enjoy this as much as we do!

Green Chile Casserole
What you'll need:
2 lbs ground beef
1 package corn tortillas
2 cans medium green chile enchilada sauce (1 can 28 oz/ 1 can 19 oz)
1 can (16 oz) green chile & lime refried beans
1 can (15.25 oz) whole kernel corn
2 cans (4 oz each) hot diced green chiles
2 cups hot pepper shredded cheese
2 cups Fiesta blend shredded cheese
Salt
Pepper
Onion powder
Garlic powder
Ground cumin
Sour cream, optional
2 lbs ground beef
1 package corn tortillas
2 cans medium green chile enchilada sauce (1 can 28 oz/ 1 can 19 oz)
1 can (16 oz) green chile & lime refried beans
1 can (15.25 oz) whole kernel corn
2 cans (4 oz each) hot diced green chiles
2 cups hot pepper shredded cheese
2 cups Fiesta blend shredded cheese
Salt
Pepper
Onion powder
Garlic powder
Ground cumin
Sour cream, optional
How to make it:
Before you start, have your baking dish out and measure how many tortillas you will need to cover the entire bottom; you may have to cut some in half in order to do this. Then you'll need to figure how many layers will fit. For my baking dish, I use 6 whole tortillas per layer and it can fit 3 layers. Brown ground beef in pan and season with salt, pepper, onion powder, garlic powder, ground cumin and some green chiles and liquid from the can.* Drain fat from beef once cooked and set aside.
*Note: you can substitute ground beef for whatever ground meat you prefer.
While the meat is cooking, spread the refried beans on the corn tortillas and put a little enchilada sauce in bottom of the baking dish to make sure bottom is covered.
Combine cheeses in bowl. Start layering the tortillas, cooked meat, green chiles, corn, cheese and enchilada sauce, keeping in mind how many layers you will have - for mine I split everything into thirds with exception to the cheese, which you save the majority for the last layer*.
*Note: for last layer put enchilada sauce before cheese.
Bake at 375° for 25-30 mins until cheese is bubbly and browned. Top with sour cream when served, if desired. Enjoy!
