Breakfast Club!

On the weekends I love to make homemade breakfast for the family.  For us, though, most weekends, like this past weekend, are jammed packed with things to do and I just don't have time to make the whole deal - you know, a big hearty breakfast of blueberry or chocolate pancakes with eggs, bacon, fried potatoes, I could go on. So in an effort to still have a really good and yummy fast breakfast, I am constantly on the search for new ideas and stumbled upon one recently that has been spreading fast in the cooking world....overnight oats. After making them this past weekend I see why. Not only are the super simple to put together and filling, all the work is done overnight in the fridge! Grab them the next morning and they are good to go. I have a few ideas for different flavor combinations, but really the possibilities are endless, go with what you like and you'll be sure to love this just as much as we did! Tacos?!

Well our weekend was crazy busy and I didn't find myself with much time to make dinner and one thing my family absolutely just loves is tacos. So, how can tacos get any easier and faster? The answer is simple, with my twist on this classic...the taco sandwich! This meal is seriously done in 30 minutes and just as addictive as the original. My kiddos are always wanting me to make these and, as they are the perfect go to fast meal, I usually comply. Make these the next time you are in a pinch for time and your family will be sure to love it!  What's cooking in my kitchen this week: Taco sandwiches What you'll need: 2 lbs ground beef 2 packages taco seasoning half head of lettuce 1-2 tomatoes 1 cup salsa 6 oz cream cheese, softened 1-2 packages hoagie buns 1-2  packages sandwich sliced cheddar cheese salt ground black pepper How to make it: Brown ground beef in large pan over medium-high heat, season with salt and ground black pepper. St. Paddy's Day!

I decided to come out a little early with this week's blog as one of my favorite times of year, St. Paddy's Day, is coming up and I just couldn't wait. This is partly because of my Irish background, take one look at my freckled face and you know, but mostly because I get to have one of my favorite meals - corned beef, cabbage, potatoes and carrots, and Irish soda bread. If you've never had soda bread, there's two things you need to know. First, there's no soda pop in it, like my dear hubby always says - the soda refers to baking soda - and second, you are in for a nice treat. It's soft, dense, and slightly sweet due to the sugar in it, making it perfect to soak up all the juices from the corned beef, oh so yummy! This will be such a hit with your family for your St. Paddy's Day meal, they'll be sure to ask for it year after year! Cheesy, gooey, goodness!

Cheese, steak, peppers, onions, hoagie bun. Oh, and more cheese. Do I need to say more? Sometimes the best things in life are the simplest things. If your family is anything like mine, they love a good Philly Cheesesteak. Even the pickiest of our eaters will eat the peppers and onions, why? Because they're covered in cheese. Cheese truly makes anything better, and in my opinion you can never had too much! I've researched lots of different recipes and there is a huge debate about what type of cheese to use. I think I've found the perfect balance with the provolone and mozzarella cheeses. What I love about this recipe, too, is that it is super simple and if you substitute the traditional ribeye steak for a flat iron steak, it's relatively inexpensive.
