Tacos?!


Well our weekend was crazy busy and I didn't find myself with much time to make dinner and one thing my family absolutely just loves is tacos. So, how can tacos get any easier and faster? The answer is simple, with my twist on this classic...the taco sandwich! This meal is seriously done in 30 minutes and just as addictive as the original. My kiddos are always wanting me to make these and, as they are the perfect go to fast meal, I usually comply. Make these the next time you are in a pinch for time and your family will be sure to love it! 

What's cooking in my kitchen this week:
Taco sandwiches

What you'll need:
2 lbs ground beef
2 packages taco seasoning
half head of lettuce
1-2 tomatoes
1 cup salsa
6 oz cream cheese, softened
1-2 packages hoagie buns
1-2  packages sandwich sliced cheddar cheese
salt
ground black pepper

How to make it:
Brown ground beef in large pan over medium-high heat, season with salt and ground black pepper. Drain any fat from meat and put back into pan. Add taco seasoning and water, according to directions on package, and cook until water is all boiled off. While meat is cooking, cut up lettuce and slice tomatoes and put each into separate bowls.



Take softened cream cheese and put in small bowl. Add salsa and mix until cream cheese and salsa is all incorporated together.


Once meat is cooked and lettuce and tomato are prepped, and cream cheese mix is made, you are ready to assemble the sandwiches. Take the cream cheese mix and spread onto hoagie bun.


Then, just build as you would a taco...put the meat on the lower bun and place the sliced cheese, lettuce, and tomato on top. Serve with tortilla chips and salsa. Enjoy!
