Pancakes!

Well the end of the year is upon us and that means holiday season is coming to an end. I hope everyone has had a wonderful holiday season filled with lots of love and joy! As our family celebrates Christmas, this past week and weekend were full of baking and cooking and didn't leave me much time to get a recipe together to share with you all. The kids are also home from school for winter break and my trusty go-to for hot breakfast they love are pancakes, so I decided this would be perfect to share with you all. This recipe originally came from my dad, who made pancakes almost every weekend when I was little. I have played around with it a bit, like I do with every recipe, but I have found my little adjustments make the fluffiest and tastiest pancakes out there. The kids love them so much they have requested them for school functions and I have made over 100 at a time to fulfill the requests! Make this the next time would want a hot, easy breakfast and your family will be asking for it for years to come!

What's cooking in my kitchen this week:
Pancakes

What you'll need:
1 1/2 cup flour
1/2 tsp salt
2 tsp baking soda
1/2 tsp baking powder
1 Tbsp sugar
1 1/2 cup milk
2 eggs
3 Tbsp oil
1 1/2 tsp vanilla extract

How to make it:
In a large bowl combine flour, salt, baking soda, baking powder, and sugar.

Add milk, eggs, oil, and vanilla and whisk until smooth with no lumps.

Let pancake batter rest for about 10 minutes. Heat pan on medium-high heat. Once pan is hot, spray with non-stick spray and pour batter using 1/4 cup measuring cup.

Once pancakes have bubbles on the entire  top and edge looks solid, flip and cook other side about 2-3 minutes more.

Continue until all pancake batter is gone.

Makes about 16 pancakes. Serve with syrup and enjoy!

Did you know?
On this day in 1822, Louis Pasteur was born.  A French scientist, he showed that microorganisms were responsible for disease, food spoilage and fermentation.  He developed the process for killing these organisms by heat, called Pasteurization.  He also developed vaccines for anthrax, cholera and rabies.
