Pizza night!


Whether or not you have kids, pizza night is always a big deal. Believe it or not, making homemade pizza is super simple and it's a great way to involve the whole family in making dinner. I always make personal pizzas, so everyone can have just what they want. And you can always impress the kiddos by tossing out the dough! Hope you have just as much fun as we do making pizzas!

What's cooking in my kitchen this week:
Homemade Pizza

What you'll need:
Dough*
1 3/4 - 2 1/4 cup flour
1 envelope yeast
1 1/2 tsp sugar 
3/4 tsp salt
2/3 cup very warm water
3 Tbsp oil 

*Note: for my family I make this three times to have enough dough; one batch will make 3-4 personal pizzas.

Pizza 
1 jar (24 oz) favorite spaghetti sauce 
Toppings*
5-6 cup shredded cheese**

*Note: the toppings I used this time were pepperoni, Canadian bacon, red onion, green bell pepper, mushrooms, olives, and crushed pineapple.
**Note: I like to use a cheddar-jack blend as it adds a good flavor, but you can use whatever cheese you want.

How to make it:
Preheat oven to 425°F.

Combine 1 cup flour, undissolved yeast, sugar, and salt in large bowl. Add warm water and oil, and mix until well blended. Gradually add enough remaining flour to make soft dough. Knead on a floured board until smooth and elastic, about 4 mins; it is important to knead the dough for this long or it doesn't toss out to nice pizza crust. Form into ball, cover with plastic wrap sprayed with non-stick spray or tea towel, and let rise 1-2 hours, until dough has tripled in size.



Punch dough balls down and split into 3-4 balls, depending on how big you want the pizzas to be.


Get toppings prepped, like slicing bell pepper, onion and mushrooms, and place in small bowls.


Lightly spray cookie sheets with non-stick spray and being to form pizza crust by taking the ball of dough and just spinning in your handing while expanding the dough.  Once you get the hang of it, try tossing in the air and putting a spin on it. Once dough is formed to the pizza crust place on cookie sheet, put 1-2 Tbps of spaghetti sauce and spread evenly leaving just a little edge. Put all the toppings you want on the pizza and cover with nice layer of cheese - this is where I get the kiddos involved so they can create their own pizza masterpieces.




Bake for 8-10 mins, until crust is golden brown and cheese is melted. Enjoy!
