Chicken Enchiladas and a Birthday Party!


Well this weekend was another jammed packed one as we had another birthday to celebrate - wish us luck, we now have another teenager! And as the dinner menu requested was recipes I've already shared, (when I say my family loves them, I totally mean it!) I needed to come up with something quick and easy as I didn't have much time to make anything elaborate. Despite my time crunch, I wanted something homemade, good and yummy and decided I couldn't go wrong with the classic flavors of the chicken enchilada. How do you make any dish easy? Throw it into a casserole dish and bake it! With all of these things floating in my mind, I decided to go for it and make a chicken enchilada casserole. When I say the family loved it, that's an understatement...they LOVED it!! In fact, there were no leftovers. Make this the next time you're in a pinch for time and want that classic enchilada flavor and you'll be your family's hero! (Oh and did I mention it's under $20, so you'll be your budget's hero too!)

What's cooking in my kitchen this week:
Chicken enchilada casserole

What you'll need:
3 (10 oz) can shredded chicken, drained
1 (2.25 oz) can sliced olives, drained
1 (4 oz) can green chiles, drained
1 (28 oz) can green enchilada sauce
1 (15.25 oz) can corn, drained
14 corn tortillas
2 cups shredded cheese
8 oz sour cream

How to make it:
As I mentioned earlier, this is super easy to make. Start by pre-heating oven to 350°. Prep corn tortillas by cutting into sixths and set aside.


As I wrote about last week, having a mise en place is the key to great meals and you even want to have one for simple, easy meals. 


Next, take canned chicken and place in large bowl. Put taco seasoning in and mix until well incorporated.


In a small bowl, pour in the enchilada sauce and sour cream.  Stir with whisk until smooth consistency and set aside.


Now dump the corn, green chiles, and pieces of tortilla in large bowl with chicken. Pour in enchilada sauce mix and stir until everything is coated evenly with the sauce. Place in large baking dish.


Sprinkle shredded cheese all over top and top with sliced olives.


Bake 30-35 minutes, until cheese is melted and golden brown. Serve with dollop of sour cream. Enjoy!
