Housewarming!

Well this past weekend we finally had our housewarming party and it was EPIC! So amazing to celebrate our new home with family and great friends. This by far was the biggest party we have ever hosted, so we had to make sure everything was just right. The hubby and I decided to each tackle a meat, so he went with smoked pulled pork and I decided to make my mojito chicken. I came up with this recipe a number of years ago after having one too many mojitos and thought all the flavors would go perfect with chicken - I was right. I have yet to make it for my hubby, so this was the perfect opportunity to finally make it. To go with the pulled pork, I made my sweet BBQ sauce, which paired perfect with the smokey meat. Sides are what helps make meals memorable to me, so I went with the classics - my homemade potato salad, coleslaw, veggie tray, and queso dip. Omelettes!

It's been a while since I've made a nice Sunday breakfast and it's been quite a few years since I've had an omelette, so I decided I needed to do something about that this past weekend. I hate to admit this, but the majority of our kids haven't even had an omelette, so I definitely needed to remedy this. These were such a hit, I apparently now have to make more omelettes. What I love about this breakfast is that it customizeable to each person, so there are no complaints. Also, with all the fresh veggies, it doesn't make you feel guilty for eating the whole thing. Birthday fun and ham tetrazinni!

Well the past weekend was my birthday and due to this, I didn't do much cooking - the hubby and kiddos handled the majority of it! I had a fantastic birthday dinner of grilled cedar plank salmon with garlic chive mashed potatoes and a fresh salad finished with pineapple upside down cake, my fav (pictured above). Yummy! With all the birthday fun and not doing the cooking, it didn't leave me time to come up with something new, so this week I have an oldie but a goodie to share - ham tetrazinni. What I love about this meal is that it is perfect for any ham leftovers you may have, is fast and easy to make, and the kids love it! Fourth of July!

Well my favorite time of year is upon us and it's my favorite for a couple of reasons. The first is celebrating our great nation - I mean who doesn't like family, food, and sparkles! The second is that  it means my birthday is soon to follow, and I get a day to tell the kids it's all about me! This year I decided that I needed to switch up our normal routine of burgers, dogs, and the usual sides but wanted to keep it all American still. If we aren't grilling burgers, we are grilling steaks and we haven't had steak in a while, so my problem of wanting something different was soon solved. We used to be able to get a really great garlic peppercorn steak marinade but sadly all the grocery stores stopped carrying it, so wanting these flavors I decided to make my own.
