Birthday fun and ham tetrazinni!


Well the past weekend was my birthday and due to this, I didn't do much cooking - the hubby and kiddos handled the majority of it! I had a fantastic birthday dinner of grilled cedar plank salmon with garlic chive mashed potatoes and a fresh salad finished with pineapple upside down cake, my fav (pictured above). Yummy! With all the birthday fun and not doing the cooking, it didn't leave me time to come up with something new, so this week I have an oldie but a goodie to share - ham tetrazinni. What I love about this meal is that it is perfect for any ham leftovers you may have, is fast and easy to make, and the kids love it! Make this the next time you are in a pinch for time and need to use those ham leftovers and the family will be sure to ask for it again and again!

What's cooking in my kitchen this week:
Ham tetrazinni

What you'll need:
1 box spaghetti noodles
2 can (10.5 oz) cream of mushroom soup
1 lb ham, diced
1 shallot
2-3 cloves garlic, minced
2 cups shredded cheese
1 cup milk
2 Tbps butter
1/4 tsp ground black pepper
1/4 tsp salt
1/2 tsp celery seed

How to make it:
First, get pot of water boiling to cook noodles in. Next, mince up garlic and finely dice shallot set in bowl and set aside. If you need to dice up the ham, do it now.


 Place butter in pan, melt on medium-high heat and saute shallot and garlic about 2 minutes.


Add ham and continue to saute for another 2 minutes. Add cream of mushroom soup and milk and stir until smooth.


Season with salt, ground black pepper, and celery seed. Add cheese to sauce a handful at a time and stir until melted.


Turn heat to low and continue to simmer while noodles cook. Once noodles are done, drain and add to sauce and stir until noodles are completely covered.


Serve with bread or roll and enjoy!
