Mother's Day!


So my dear readers, as I wrote in last week's blog we bought a house and are in the process of moving - this upcoming weekend we will be moving all the big stuff and officially be all moved in. Due to this, I haven't had any time to make any home cooked meals, so don't have a recipe to share with you this week and probably won't have one next week either. I'm sorry about this, but I promise to be back in full force after the move! I do have to give a shout-out to my hubby and boys as they cooked me a nice dinner for Mother's Day this weekend. The hubby grilled ribeye steaks, after marinading in my new favorite marinade - brown sugar bourbon - while the boys made me a nice salad and roasted garlic mashed potatoes (the above picture was my dinner). Yum! Finished off with a tres leches cake, can you say spoiled!  I'll leave you all with a preview of my kitchen and some pictures of my garden, it's already established! Tune in next week as I'll share more pictures of my new kitchen!

Octodogs!

This past weekend we were down a couple kiddos for various reasons and were left with mainly our youngest ones. A favorite dinner for them growing up has been octodogs and while reflecting that we almost don't have any little kiddos anymore, I decided that I should make this dinner one last time before they completely grow out of it. What I love about this meal is that it is quick, healthy, and full of fun for the kids! If you have picky eaters who don't like veggies, this is an easy way to get them to eat those veggies that we moms like to make sure every dinner gets. New Kitchen!

This last week was super busy for us as it was official move day! As with any move, things went smoothly and then there were things that didn't go according to plan, but we are now in our new house! The lack of sleep and sore muscles are totally worth it. Have to get back to the unpacking now, but as promised last week, I have pictures of my new kitchen to share. Sunday dinner

Ask my kids what's for dinner on Sunday night and they'll all tell you "Green Chile Casserole" as this is almost always what dinner is. This is for a couple different reasons. The first being it feeds us all with leftovers, second it only has seven main ingredients, and lastly, due to the few ingredients, it is under $25. Any time I can get dinner for about $3 per person, this is a huge win for my food budget! This recipe also happens to be near and dear to my heart as it has been in my family for three generations. It also is quick and easy so with all the craziness of Sunday nights getting ready for the week, I can still make a good, home-cooked meal.
